Sweet Potatoes in the Raw

Ginger-Pineapple Sweet Potato Noodles


  • 2 Whole organic sweet potatoes peeled
  • 1 lemon squeezed
  • 1 small orange squeezed
  • 1 tsp orange peel
  • 1 tbl raw agave nectar
  • 1 tbl coconut oil
  • 2 tbl olive oil
  • Pinch of cayenne pepper
  • ½ tbl fresh grated ginger
  • 1 tbl Frozen Pineapple chunks minced
  • ¼ tsp nutmeg grated
  • sea salt to taste


  • Spiral the sweet potatoes and put in a glass bowl (you can purchase a spiralizer from our Yah’some Living Pantry)
  • In a blender, put in lemon and orange juice
  • Add orange peel, ginger and agave nectar
  • Add coconut and olive oil
  • Add sea salt to taste and pinch of cayenne pepper
  • Blend until smooth and drizzle over noodles
  • Add pineapples to mixture and toss until mixed well
  • Lightly grate nutmeg over noodles. Can be made 1 day ahead of time.  Delicious!
